There’s nothing like a hearty soup to keep you warm in the frigid weather of winter. Frankly, I’ve been trying just about everything to keep out of the cold and to brace myself through until spring. A savory tea infused soup Recipe that I call “Creamy Leek Tea Soup” not only is delicious and creamy but it also warms my soul and quenches my need to include the wonderful beverage of tea in just about everything.
In this article, you will find the ingredients for and simple instructions on how to make Creamy Leek Tea Soup. This Recipe is quick and will only take about 20 minutes to prepare. Enjoy!
3 cups of Leaks (2 large leeks), ends removed and roughly chopped
Numi Organics Savory Tea - 1 Spinach Chive Bag (8 ounces of steeped tea)
1 medium-sized Cauliflower (4-5 cups), chopped
1 cup of Onion, chopped
3 cups of Chicken Broth
1 cup of Coconut Milk
1-2 tablespoons of Butter
Salt and Pepper (to taste)
Step 1: Steep Tea as recommended; set aside.
Step 2: Wash Leeks thoroughly; add to a large soup pot.
Step 3: Roughly chop Cauliflower; add to soup pot.
Step 4: Add Onions, Chicken Broth, Tea, Coconut Milk and Butter to the soup pot.
Step 5: Bring to a boil and then reduce to a simmer for about 20 minutes or until the vegetables are tender.
Step 6: Allow to cool then purée in blender until smooth (You may have to separate into two batches so that the blender does not overflow)
Step 7: Season with Salt and Pepper
Step 8: Serve and Enjoy!
Leeks are so fragrant and they jazz up just about any dish. To me they look like a giant’s green onion (lol).
